- Shredded pulled pork: If you have any leftovers from a previous cookout, you can use them. If not, you can make a fresh batch using a slow cooker.
- Sour cream and cream cheese: Let your cream cheese sit at room temperature for a few minutes before you start prepping. This will soften it and make mixing much easier.
- BBQ sauce: Use your favorite brand! Personally, I love Big Daddy’s Mild BBQ Sauce for pulled pork.
- Corn tortillas: This is what’s commonly used, but you can replace it with flour tortillas if you prefer.
- Chili powder: This recipe calls for half a teaspoon, but if you like it spicier, feel free to add more.
- Sharp cheddar cheese: Skip the pre-shredded stuff and grab a fresh block. Grating it yourself will give you a stronger flavor.
- Ranch dressing: My favorite is from Whole Foods 365. It reminds me of Wingstop’s ranch — perfectly creamy, garlicky, and full of flavor!
- Chipotle chili powder: This adds a mild yet deep and complex heat that complements the dish without overwhelming it.
- Lime juice: Fresh is always best, but bottled lime juice is a good alternative.

Experiment with new ways to serve and enjoy pulled pork with this cheesy taquitos recipe paired with homemade chipotle ranch dressing! Super simple, and packed full of flavor!
Ingredients
- 10 corn tortillas (or flour tortillas)
To make pulled pork:
- 3 to 3.5 pounds of boneless pork shoulder
- 14 ounces of chicken broth
- 1 onion (chopped)
- 6 cloves of garlic (peeled and smashed)
- 2 teaspoons EACH of chili powder and cumin
- Salt (to taste)
For the filling:
- ¼ cup of sour cream
- 2 ounces of cream cheese (softened)
- ½ cup of your favorite BBQ sauce
- ½ teaspoon of chili powder
- 2 tablespoons of olive oil
- 1½ cups of sharp cheddar cheese (freshly grated)
For the chipotle ranch dressing:
- ½ cup of ranch dressing
- ¼ teaspoon of chipotle chili powder
- ½ - 1 teaspoon of lime juice
Instructions
- Trim the fat from your pork shoulder, then cut it into 8 pieces. Place them onto the basin of your slow cooker before adding your chicken broth, onion, garlic, chili powder, cumin, and salt. Stir to combine.
- Cook the mixture on high for 5 to 6 hours. Then, take your pork out and shred it using two forks. Transfer it to a large bowl, adding about half a cup of the juices to keep it moist. Set it aside.
- Preheat your oven to 425°F and spray your baking pan with non-stick cooking spray.
- Next, grab a mixing bowl and combine your filling ingredients. Stir in your shredded pork and cheese.
- Warm your tortillas on the stove by heating a dry skillet over medium heat and cooking the tortillas for about 20 to 30 seconds per side.
- When they’re nice and warm, transfer them to a plate and fill each one with about ¼ cup of your filling mixture. Roll each tortilla tightly and place them seam-side down on your baking pan.
- Brush the tops of your tortillas with olive oil, then place them in the oven to bake for 15 to 20 minutes. You’ll know they’re ready when the edges turn golden brown.
- While your taquitos are in the oven, prepare your sauce by combining your ranch dressing, chipotle powder, and lime juice. Give it a good stir, and pop them in the fridge until it’s time to assemble.
- Once the taquitos are done, take them out of the oven, transfer them to a serving platter, and drizzle your homemade sauce. Feel free to add more toppings if you want!
