Ingredients
- 4 small chicken breasts (skinless and boneless)
- 1 tablespoon of olive oil (for searing)
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of salt (divided)
- 1/4 teaspoon of garlic powder
- 4 ounces of cream cheese (softened)
- 1/4 cup of grated Parmesan cheese
- 1/2 cup of fresh spinach (chopped)
- 2 tablespoons of sun-dried tomatoes (chopped)
- 1 teaspoon of minced garlic
- 1/2 teaspoon of red pepper flakes (optional)
Instructions
- Preheat your oven to 375°F.
- Place the chicken breasts on a clean cutting board. With a sharp knife, carefully cut a small slit in the middle of the elongated side of the chicken breasts. You want the cut to be as deep as possible without poking to the other side of the breast. Do this very carefully and slowly. Once done, the slit will open up into a pocket.
