Ingredients
For the Beef:
- 1 pound of flank steak (cut into thin strips or cubes)
- 2 tablespoons of cornstarch
- 1 teaspoon of Chinese 5 spice
- 1 teaspoon of salt (or to taste)
- ½ teaspoon of pepper (or to taste)
- 1 tablespoon of neutral oil
For the Noodles:
- 5 ounces of dried or fresh egg noodles
For the Vegetables:
- 1 large carrot (peeled and sliced into thin strips)
- 1 bell pepper (sliced into thin strips)
- 3 spring onions (sliced)
- 1 red chili (finely chopped)
- 1 teaspoon of fresh ginger (finely chopped)
- 2 cloves of garlic (minced)
- 1 tablespoon of neutral oil
For the Sauce:
- 1/2 cup of soy sauce
- 1/2 cup of mirin
- 1/2 cup of light brown sugar
- 2 tablespoons of sesame oil
- 1 tablespoon of fish sauce
- 1 tablespoon of tomato ketchup (optional)
- 1 tablespoon of cornstarch
- 2 tablespoons of water
For the Garnish:
- 2 spring onions (sliced)
- 1 tablespoon of sesame seeds (optional)
Instructions
- If you haven’t already done so, prepare the vegetables according to the ingredient list. Slice the carrots, bell peppers, and spring onions. Chop the red chili and ginger, then mince the garlic.
- Create the teriyaki sauce by combining the soy sauce, mirin, light brown sugar, sesame oil, fish sauce, and tomato ketchup in a small bowl.
- To finish your prep work, slice the flank steak into thin strips. Season them with salt, pepper, and Chinese 5 spice. Then, in a large bowl, toss the steak strips with 2 tablespoons of cornstarch until each piece is well coated.
- Now that you’ve prepped all your ingredients, cook the dried or fresh egg noodles according to package instructions. Once cooked, drain and set them aside.
- In a deep frying pan or wok over medium-high heat, heat a tablespoon of neutral oil. When the oil is hot, add the steak slices in a single layer. Don’t overcrowd the pan. If needed, cook the steak in batches. Sear the wider sides of each slice for about 3 to 4 minutes, then remove the steak from the pan.
- In the same pan, add the remaining tablespoon of oil. Add the carrots and bell pepper and sauté them for about 2 to 3 minutes. Once they start to soften but are still relatively firm, add the minced garlic, chopped ginger, and chili to the pan, cooking for another minute until everything becomes fragrant.
- Add the teriyaki sauce to the pan and bring it to a simmer. In the meantime, create a slurry by mixing 1 tablespoon of cornstarch with 2 tablespoons of water. Once the teriyaki sauce simmers, slowly stir the slurry into the sauce.
- Continue cooking the sauce for a minute or two until it thickens.
- Add the noodles and steak slices to the pan and toss to coat everything with the teriyaki sauce.
- Divide into serving bowls and serve with green onions as garnish!
