Have you ever wondered how many cups of ground beef there are per pound? This information can come in handy when you’re following recipes for lasagna or other dishes that call for cooked hamburger meat. But the answer might not be as straightforward as you expect.
How Many Cups of Ground Beef in a Pound?
A pound of raw ground beef contains between 3 and 4 cups of meat on average. The total amount will depend on the fat content and the coarseness of the grind, among other factors. Remember that the meat will lose roughly 25 percent of its weight during the cooking process.
How Much Does Ground Beef Shrink When Cooked?
You probably already know that meat weighs less after it’s cooked than it did when it was raw. That’s because meat is made up of a great deal of water. When the meat is exposed to heat, it loses some of this moisture.
In the case of ground beef, the cooking process also renders out plenty of fat. You can expect to see a sizable amount of grease in the pan when you’ve browned a batch of ground beef, especially if the fat content was 15 percent or higher (see below).
The amount of shrinkage can vary, depending on the fat and moisture content. But in general, a pound of ground beef should shrink by about 25 percent after it’s fully cooked.
A Word About Fat Content
Take a look at the fat content of your ground beef before you buy it. You want to get the right type of ground meat for the recipe you’re making. The meat-to-fat ratio will have a direct effect on the quality of your results.
For example, a good cheeseburger should contain at least 15 percent fat. When grinding our own beef, we aim for a meat-to-fat ratio of 80 to 20. This will give the burgers the juicy consistency that you’re looking for.
On the other hand, if you’re making a dish like stuffed cabbage leaves, lean ground beef—at least 90 percent lean—is the way to go. The meat is raw when you stuff the cabbage leaves with the mixture, so there’s no way to drain off any excess fat.
For obvious reasons, lean meat will shrink down less than ground beef that contains 20 percent fat. Keep that in mind when you’re planning your measurements.
How Many Cups of Ground Beef in a Pound?
A pound of ground beef should measure between 3 and 4 cups when it’s raw. Taking shrinkage into account, this means your total meat yield could be somewhere between 2-1/4 and 3 cups.
Keep this in mind when you’re cooking off hamburgers, too. A single pound of 80-to-20 ground beef should yield 3/4 pound of cooked meat. So if you’ve formed the meat into burgers that weigh 1/4 pound, they’ll weigh roughly 1/5 pound apiece once they’re cooked.
At What Temperature is Ground Beef Considered Done?
It’s critical to cook ground beef to a safe internal temperature. This is important no matter what type of meat you’re dealing with, but when the meat has been ground, it’s even more so.
Raw meat poses a health hazard because dangerous bacteria can breed on the surface of the animal’s flesh. Exposing the meat to high temperatures kills off the bacteria, rendering it safe to consume.
But here’s the tricky part. These bacteria reside on the surface of the flesh, so as long as you sear a steak over high heat, it should be safe to eat even if the interior remains very rare.
When the same meat is fed through the grinder, the surface flesh gets all mixed in with the rest of it. So you’ll need to cook the meat all the way through to ensure food safety.
What’s considered a safe temperature? For all ground meat products, 165 degrees should do the trick. You can stop cooking the meat when it hits the 160-degree mark and let carryover cooking take care of the rest.
Does Ground Beef Weigh Less than Whole Muscle Cuts?
If you were to put a pound of beef through the grinder, it would come out weighing a bit less than 1 pound. The grinding process causes the meat to lose a small amount of moisture.
However, the difference is negligible. Unless you’re making 20-plus pounds of ground beef, you probably won’t notice a great deal of difference between the starting weight and your total meat yield.
How To Measure Ground Beef
The easiest and most accurate way to measure the weight of your ground beef is to use a kitchen scale. But if you don’t have one—or just don’t want to take the time to use it—there’s a shortcut that should provide you with a good estimate.
After washing your hands, take a handful of the ground beef into your palm. The amount in your hand should be about the size of a deck of playing cards. This is considered a 4-ounce serving. If you multiply that amount by 4, you should have 1 pound of beef.
Of course, this isn’t an exact measurement. But it’s a good rule of thumb to follow, especially if your recipe allows for some leeway in terms of portion sizes.
How Much Does a Pound of Ground Beef Cost?
At the time of this writing, the average per-pound cost of ground beef was between $3.50 and $7. Obviously, the number might be higher or lower, depending on the quality of the meat and where you purchased it.
Although lean ground beef often carries a higher price tag than ground chuck, that doesn’t necessarily mean that it’s better. As we pointed out, some recipes might actually suffer if you were to substitute a leaner product.
The Bottom Line
How many cups in a pound of hamburger? That depends on the meat-to-fat ratio and whether the burger is cooked or raw. But you should be able to come up with a rough estimate, which will make following your chosen recipe that much easier.
