Some people stow their grills away once summer ends, but I like to keep mine up and running in the fall to prepare warm, cozy dishes like the ones below.
1. Galbi (Grilled Korean Short Ribs)
Galbi or kalbi is a Korean short ribs dish that’s oozing with so much flavor. The beef is marinated in a blend of brown sugar, soy sauce, and aromatic spices. Then, it’s grilled to charred perfection!
As much as possible, I want to follow the traditional way of serving and eating this dish. So, when I make this recipe at home, I have it with a dip of sesame oil, salt, and pepper.
I also add a healthy amount of gochujang (a sweet, spicy, and savory fermented condiment) on top, before wrapping my galbi in lettuce leaves and taking a big bite.

2. Grilled Eggplant Salad With Tahini Dressing
Since eggplants are in season from August to October, this is another fantastic recipe to make in the fall. And the best part is that it only takes a few minutes to throw together!
As much as I love indulging in hearty, filling dishes like galbi during the colder months, there are days when I crave something nutritious. On those days, I make this recipe.
So, if you’re in the mood for something light and fresh, with strong Mediterranean flavors, this grilled eggplant salad is perfect for you.
It’s got eggplants, mint, parsley, tomatoes, lemon, feta cheese, and pine nuts. If you want to add some protein, you can also incorporate grilled chicken or salmon.
The homemade tahini dressing is the cherry on top that brings out the delicious nutty and smoky flavors of the grilled eggplant.

3. Smoked Cornish Game Hens
When the leaves start to turn, you know that Thanksgiving is just around the corner. And you know what that means — it’s time for the preparations to begin!
And while it’s tradition to serve Thanksgiving turkey during the holiday, I like to serve some smoked cornish game hens from time to time.
Compared to turkeys, these birds are much easier to grill because of their smaller size. Plus, their meat is much more flavorful than turkey’s, making them a delicious addition to any holiday feast.

4. Grilled Jerk Chicken
Here’s a little fun fact: the term “jerk” refers to a specific spice blend that uses Scotch bonnet peppers and allspice berries as the main ingredients.
It has its roots in Jamaican cuisine and is popular throughout the Caribbean. Traditional jerk chicken is typically grilled over pimento wood, which helps infuse it with more flavor and aroma.
I love making grilled jerk chicken in the fall because it’s fiery, hot, smoky, and incredibly fragrant. It has just the right amount of heat to warm me up from the inside.

5. Grilled Mac and Cheese
There’s something about the fall season that makes me want to curl up in a blanket and stuff myself with comfort food. One of my favorite cozy meals this time of year is mac and cheese.
I usually cook it on the stovetop or bake it in the oven, but I found a better method to make my mac and cheese, richer, creamier, smokier, and a little crispier.
