Despite taking only half an hour to cook, these burrito wraps are very delicious and filling!

🧑‍🍳 Important Steak Burritos Components

Let’s briefly cover the important components of burritos, including the variations you can use for each one.

Tortillas: Of course, you can’t have a burrito without this foundational ingredient. The classic option is flour tortillas, as they’re very pliable and crisp up well, but you can opt for other alternatives like corn or whole wheat tortillas if preferred.

Steak: For this recipe, feel free to use any steak cuts you have! Even the stir-fry steak cuts that you can find in supermarkets will work well for this dish. 

Pico de Gallo or Salsa Verde: Feel free to use either of these or a combination of them in your burritos. For me, homemade pico de gallo works wonders for this recipe.

Fillings: The most customizable component of burritos! As long as the steak’s well-seasoned, your burritos are bound to taste great even if you switch up the rest of the fillings. My default options are cilantro lime rice, guacamole, Chipotle mayo, and (lots of) shredded cheese.

  • Dry the steak’s marinade before grilling it to allow each piece to sear evenly. 
  • If using rice, make sure to season or flavor it before adding it to the burritos. 
  • When customizing this recipe, try to still include a variety of flavors and textures. 

🧊 How to Freeze Steak Burritos

As mentioned, this steak burrito recipe is perfect for meal prep, as it can last for several days in the fridge and up to months when frozen.

However, prepped incorrectly, burritos can suffer from freezer burn.

To avoid this, make sure to wrap each burrito with foil or plastic wrap. Then, place the burritos in freezer-safe resealable bags.

For best results, make sure there is little to no air inside the bag before popping it into the freezer.

Note: Reheat your burritos using the oven or microwave.

You can whip up this easily-customizable, cheesy and meaty burritos in less than an hour, including prep and marinating time!

Ingredients

For the steak:

  • 1 pound of strip steak (sliced)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1 clove of garlic (minced)
  • 1 tablespoon of lime juice
  • 1/2 teaspoon of cumin
  • 1 tablespoon of soy sauce
  • 1 tablespoon of olive oil

Burritos assembly:

  • 1 cup of cooked cilantro lime rice (or Mexican rice)
  • 1/2 cup of guacamole
  • 1/2 cup of pico de gallo
  • 1/2 cup of shredded cheddar cheese
  • 4 flour tortillas (8-inch)
  • Fresh jalapeños or bell peppers (sliced)
  • Fresh cilantro or green onions (chopped)
  • Chipotle mayo (or lime crema)
  • Nonstick cooking spray

Instructions

  1. In a bowl, create the marinade by mixing the salt, pepper, garlic, lime juice, cumin and soy sauce. 
  2. Toss the steak pieces into the bowl. Ensure that every piece is coated well with the marinade, and allow the beef to marinate for at least 30 minutes or an hour. 
  3. Pat the steak pieces dry. In a skillet or griddle that’s over medium-high heat, cook the steak cuts for about 5 minutes or until you reach the preferred doneness of your steak. Set the beef cuts aside. 
  4. Warm each tortilla for about half a minute to make them pliable.
  5. Assemble the burritos. Start by laying out the warm tortillas flat. After that, add the rice, steak, guacamole, pico de gallo, and cheddar cheese to each one. Top each tortilla with bell peppers or jalapeños and drizzle some Chipotle mayo to taste. Avoid overfilling.
  6. Roll each burrito. 
  7. Spray each burrito with nonstick spray. Then, in a hot skillet or griddle, cook each one seam-side down. After about a minute, or until the grilled side crisps up, flip and cook the other side until golden brown.
