i was inspired to use your basic vinegar formula but modified by diluting the apple cider vinegar with apple juice and a bottle of dark beer like Modelo Negro (hate to give it up, but....)and then braise it covered at 225F for 4 hours before checking the temp and then add time as needed. But, I also cheat and use the Kirkland mesquite rub during the cooking. Less creative, but quick. It does add a little smoke to it. However, my BBQ sauce is Soy Vey (invented by a Korean and jewish couple) It is a teriyaki Base. Then i coat and place ribs on Teflon mats on the grill for about 15 minutes for a nice crisp up. This avoids such tedious clean up since it comes off the mats so easily and not on the grill gratings.
Thanks for expanding my ribs with the vinegar idea.
