Here&#039;s my little tweak: I don&#039;t wait until the grill temp is 225 -- I put the meat on at the point when the temp reaches about 130 so that the ribs &quot;cold smoke&quot; first. Slowly, the temp rises through those first two hours and gets to 225. To make up for the lower temp of the first time period, I increase the middle time period of foil wrap cooking to three hours (with a wash of water, agave syrup, and apple cider vinegar), and let the temp rise to 250. Once those three hours are done, I unwrap as the recipe says and I finish with the final hour with BBQ sauce of some kind. Gosh they are good!]]></description>
