					<description><![CDATA[I’ve noticed a trend that a lot of supermarkets and warehouse stores are selling pork loin ribs with weights that exceed 3 pounds.  I’m happy just to find them nowadays a bit over 2 pounds.  I refer to the larger ones as “horse ribs”.  They’re more difficult to cook, and generally have a lot more fat and gristle, if that is accurate.  My butcher shop closed years ago.  Sign of the times.]]></description>

					<description><![CDATA[I have to disagree with your claim that there is no difference between loin back and baby back ribs, at least there’s a difference where I get mine. You even mention the difference in this article. You state, “They might even have a half an inch or so of loin meat attached to the top, depending on the butcher.”  That’s the difference. Loin back ribs have that extra loin meat while baby backs do not.]]></description>
