Great points! I cooked thighs at low temp (225F) on a stick burner as part of prep for Smoked Pablano Chicken. First time to smoke cream cheese. Sampled it when I took it off the smoker. Amazing! But back to the important safety item: Cooking for a church pot lung on Sunday @ 12 Noon serving time. So, guaging I am one of the younger members @ 65+, that eat at our monthly gatherings, I elected to bring the temp up to 165F in the oven before chilling overnight. Planning for the second cook @400F for 30 minutes Sunday morning. You are making the world safe for humanity! Or al least my church! Peace, Love, Chicken!
