Also the size of the ribs bone/weight vs the amount of meat per rib bone will  make a difference in cook times.  A rack of ribs that has larger rib bones and less meat requires less cooking time than a meatier rack.....regardless where the cut came from....and the amount of fat content could have an effect on cook time. (fat vs meat= usually means an increase in temp for rendering fat)]]></description>

The 50 percent guideline is a general rule of thumb, meant to remind people to give themselves plenty of time when making substitutions. A rack of spare ribs might take as long as 7 or 8 hours at 250, but it’s better to check them after 6 hours to make sure they don’t overcook.
